TOO HOT TO COOK?

 By Tlaverty

When summer temperatures climb, the last thing most people want to do is turn on the oven. But relying on takeout isn’t the only option. With a few simple ingredients and smart shortcuts, you can enjoy fresh, nutritious meals that are quick to prepare and keep your kitchen cool.

“Hot weather often changes the way we eat,” says Amanda Menk, RD, CDCES, a registered dietitian and certified diabetes educator at Cooper University Health Care. “Fortunately, there are plenty of healthy meals that require little to no cooking while still supporting heart health, blood sugar control, and overall wellness.”

Whether you’re coming home from the beach, looking for an easy lunch, or simply trying to beat the heat, these recipes make healthy summer eating easy.

Greek Yogurt Berry Parfait

This refreshing breakfast, or anytime snack, comes together in just a few minutes. Greek yogurt provides protein to help keep you full, while berries add fiber and antioxidants. Top it with a sprinkle of granola or chopped nuts for extra crunch.

Ingredients

1 cup plain Greek yogurt

½ cup mixed fresh berries (strawberries, blueberries, raspberries, or blackberries)

2 tablespoons low-sugar granola

1 tablespoon chopped walnuts or almonds

Cinnamon (optional)

Instructions

Layer the Greek yogurt, berries, and granola in a glass or bowl. Sprinkle with chopped nuts and a dash of cinnamon, if desired. Serve immediately.

Lemon-Herb Couscous Salad With Rotisserie Chicken

No need to heat up the grill. Store-bought rotisserie chicken makes this light, protein-packed meal quick and convenient. It can be served warm, chilled, or packed for lunch the next day.

Ingredients

1 cup whole wheat couscous

1 cup low-sodium chicken or vegetable broth

1 cup chopped rotisserie chicken (skin removed)

½ cup cherry tomatoes, halved

½ cucumber, diced

¼ cup finely chopped red onion

¼ cup chopped fresh parsley

2 tablespoons fresh lemon juice

1 tablespoon olive oil

Salt and pepper to taste

Instructions

Prepare the couscous according to package directions and allow it to cool slightly. Combine the chicken, tomatoes, cucumber, onion, and parsley. Drizzle with lemon juice and olive oil, toss gently, and season with salt and pepper. Serve immediately or refrigerate until ready to enjoy.

Mediterranean Shrimp Salad

Skip the cooking by picking up cooked shrimp from the seafood department. Tossed with crisp vegetables and a light lemon vinaigrette, this refreshing salad is perfect for hot summer evenings.

Ingredients

1pound cooked shrimp

1 cucumber, diced

1 cup cherry tomatoes, halved

¼ cup sliced red onion

¼ cup crumbled feta cheese

2 tablespoons chopped fresh parsley

Juice of 1 lemon

1 tablespoon olive oil

Salt and pepper to taste

Instructions

Combine all ingredients in a large bowl and toss gently. Chill for 15 to 20 minutes before serving, if desired.

Frozen Banana Bites

These refreshing treats satisfy a sweet tooth without a lot of added sugar. Bananas provide natural sweetness, while nut butter adds protein and healthy fats.

Ingredients

2 ripe bananas, sliced into ½-inch rounds

¼ cup natural peanut butter or almond butter

½ cup dark chocolate chips (70% cacao or higher)

1 teaspoon  coconut oil (optional)

Instructions

Spread a small amount of nut butter between two banana slices to make mini sandwiches. Freeze for at least 30 minutes. Melt the chocolate with coconut oil, if using, and dip each frozen banana bite halfway into the chocolate. Return to the freezer until set.
